Sprouting Bean Salad

Sprouting Bean Salad (V)
Sprouting Mixed beans, pomegranate seeds, pine nuts, micro cress, spiced Russian dressing.
METHOD
For the Russian Dressing
In a food mixer combine all the ingredients and Blend in the food mixer until smooth. Taste and adjust seasoning as required.
To assemble the Salad
In a mixing bowl add the sprouting bean mix, sakura cress, pine nuts, pomegranates seeds, baby plum tomatoes and sliced sugar snaps with a few tablespoons of the Russian dressing. Gently stir until combined.
Place a heaped amount of the salad mix into the centre of a plate and drizzle more dressing onto the plate and over the salad. Garnish with edible flowers to complete presentation.
