Sprouting Bean Salad

Ingredients

To serve 4

For the Salad

  • 300g Sprouting Bean Mix
  • 150g Micro Sakura Cress
  • 50g Baby Plum Tomatoes (halved)
  • 30g Toasted Pine Kernals
  • 30g Pomegranate Seeds
  • 30g Sugar Snap Peas (sliced)
  • 5g Edible Flowers
  • Salt
  • Black Pepper

For the Spiced Russian Dressing

  • 200ml Tomato Juice
  • 60g Sugar
  • 1 tsp Sherry Vinegar
  • 0.5 stick Celery
  • 50g Grated Onion
  • 0.5 tsp Paprika
  • 1 each Fresh Red Chilli (sliced)
  • 100ml Olive Oil
  • 100ml Vegetable Oil
  • 1 tsp Worchester Sauce
  • 0.5 tsp Tabasco Sauce
  • 0.5 Lemon Juiced
  • 1 clove of Garlic
  • Salt (pinch)
  • Black Pepper (pinch)

Method

For the Russian Dressing

  1. In a food mixer combine all the ingredients and Blend in the food mixer until smooth. Taste and adjust seasoning as required.

To assemble the Salad

  1. In a mixing bowl add the sprouting bean mix, sakura cress, pine nuts, pomegranates seeds, baby plum tomatoes and sliced sugar snaps with a few tablespoons of the Russian dressing. Gently stir until combined.
  2. Place a heaped amount of the salad mix into the centre of a plate and drizzle more dressing onto the plate and over the salad. Garnish with edible flowers to complete presentation.
