Ingredients
To serve 4
For the Salad
- 300g Sprouting Bean Mix
- 150g Micro Sakura Cress
- 50g Baby Plum Tomatoes (halved)
- 30g Toasted Pine Kernals
- 30g Pomegranate Seeds
- 30g Sugar Snap Peas (sliced)
- 5g Edible Flowers
- Salt
- Black Pepper
For the Spiced Russian Dressing
- 200ml Tomato Juice
- 60g Sugar
- 1 tsp Sherry Vinegar
- 0.5 stick Celery
- 50g Grated Onion
- 0.5 tsp Paprika
- 1 each Fresh Red Chilli (sliced)
- 100ml Olive Oil
- 100ml Vegetable Oil
- 1 tsp Worchester Sauce
- 0.5 tsp Tabasco Sauce
- 0.5 Lemon Juiced
- 1 clove of Garlic
- Salt (pinch)
- Black Pepper (pinch)
Method
For the Russian Dressing
- In a food mixer combine all the ingredients and Blend in the food mixer until smooth. Taste and adjust seasoning as required.
To assemble the Salad
- In a mixing bowl add the sprouting bean mix, sakura cress, pine nuts, pomegranates seeds, baby plum tomatoes and sliced sugar snaps with a few tablespoons of the Russian dressing. Gently stir until combined.
- Place a heaped amount of the salad mix into the centre of a plate and drizzle more dressing onto the plate and over the salad. Garnish with edible flowers to complete presentation.
